The BLUE pizza flour of the Sole di Napoli line is a type 00 flour with water absorption of 57 - 60%, ideal for leavening of 12-24 hours. This type 00 (Tipo "00") Soft Wheat Flour is made from the cleaning, grinding and sifting of mixtures of common non-GM wheat of Italian and North-European origin with a medium protein value and with a good absorption and extensibility index. Without additives or added gluten.
We suggest it for pizza of course, but also for making of focaccias, sandwiches and for those restaurants / pizzerias that increasingly make homemade bread and want to have a unique and versatile product.
