Menade Sauvignon Ecologico VEGAN -750ml Bottle

Yellow with golden hues, aromatic intensity and complex display of various essences reminiscent of mint, celery, fresh basil with soft tones tha evoke similarities to mandarin/tangerin skin. Fruity, round with light integration of fruit that reveal papaya and passion fruit, wrapped in a strong component of texture.

Sauvignon Blanc, first introduced locally in 1974, has adapted well to the region’s climatology and soils, and makes for a delightful wine that is ever so easy to drink. Ours has distinctly tropical overtones together with plethora of stone fruit elements and agreeable notes of fresh herbs, complemented by nice acidity and the minerality that ensues from the outcrops of limestone underlying our various plots.

As with Menade Verdejo, each parcel – for these vary widely depending on the soil type and orientation of the vines – is picked and vinified separately, fermentation is on the basis of the grapes’ natural, wild yeasts, and the wine is left briefly on its fine lees.

100% Sauvignon / Certified organic viticulture. Independent grape harvests in accordance with composition of soils and yield management. Neither sulphur nor cooper sulphate is used in our vineyards.

ALCOHOLIC FERMENTATION

Occurs in stainless steel tanks with the natural yeast (spontaneous, belonging to the grape), under controlled temperatures at 18-22ºC. The tanks are of different capacities allowing separation of the different bunches, conforming to the differences in structure and composition of the soil. The wine stays on its lees for a controlled time.

STABILISATION

Clarification is effected with betonite, stabilization by chilling to low temperatures, and filtration is with natural cellulose.
