Penne rigate - Le Stagioni d'Italia

Italian agricultural products are special due to their deep roots in traditions and the ability to create and preserve unique specialties. A native Italian variety of durum wheat, called Senatore Cappelli, is used to produce this type of pasta. This homogenous Italian short pasta, due to the bronze drawing, maintains its authentic taste and quality. The bronze drawing process gives a particular structure, the dough comes out rough rather than smooth like common pasta.

Penne is an extruded type of pasta with cylinder-shaped pieces, their ends cut at a bias. Penne is the plural form of the Italian penna, deriving from Latin penna, and is a cognate of the English word pen. When this format was created, it was intended to imitate the then-ubiquitous fountain pen's steel nibs.
